Marvelous May

With warmer temperatures and the hint of summer ahead, we can't help but smile and feel slightly giddy. Maybe it's Cinco de Mayo, Memorial Day weekend barbecues, or the first day you can bust out a T-shirt. Or that we just won a Maggie award for this very VegNewsletter (woot!). Whatever the reason you're loving the season, enjoy the sunshine, toss a veggie kebab on the grill, and get ready for summer.

Vote for Veg Food Blogs
One vegan food blog and one veg-friendly blog are finalists in Saveur.com's Best Food Blogs Awards, and both are seeking votes in the Best Special Interest Blog category. The tongue-in-cheek titled blog What the Hell Does a Vegan Eat Anyway? features gorgeous recipes such as passion fruit cheesecake, hickory-smoked tofu, and puff pastry horns filled with asparagus and bechamel sauce (yes, please!). Veg-friendly food blog, Golubka, is named after the Russian word for dove, and features such hunger-inducing gems as fruit panna cotta, orange-cinnamon crêpes, and fig bars. Voting closes on May 12 and winners are announced on May 17. Vote for them here.

Worldwide Vegan Bake Sale Roundup
From April 23 to May 1, vegan bakers around the world united to sell sweet treats for a cause of their choosing. The international bake sale wrapped up with more than 150 groups participating. Close to $50,000 was raised for animal sanctuaries, humane societies, environmental education groups, vegan societies, special-needs children centers, funds for Japan, and many other causes. Several cookbook authors including Isa Chandra Moskowitz, Sarah Kramer, Hannah Kaminsky, and Carla Kelly organized events or baked for local sales. This annual event spans six continents and continues to grow each year.

The Truth of Factory Farming
A recent editorial and op-ed piece by Mark Bittman in The New York Times covers the hidden truth of factory farming. The editorial, published on April 26, discusses how three states—Iowa, Florida, and Minnesota—are attempting to pass laws making undercover filming on factory farms illegal, hindering what the public needs to know about where its food comes from and how animals are treated. Bittman says that we have created a huge problem if abuse and inhumane treatment on factory farms is considered normal. He writes, "Poll after poll finds that almost everyone believes that even if it costs more, farm animals should be treated humanely."

Pesto Wraps

For a quick bite-size appetizer to serve this summer at your backyard barbecue, head to the farmers' market for some fresh zucchini and basil to make these colorful Pesto Wraps. This simple raw recipe is from the cookbook, The Raw Truth: Recipes and Resources for the Living Foods Lifestyle by Jeremy A. Safron.

Serves 4 to 6

What You Need:
3 large zucchini
Sea salt, pinch
Juice of 1/2 lemon
Chopped green and purple basil leaves (garnish)

Presto Pesto:
2 cups walnuts, chopped
2 cups fresh basil, loosely packed
3 cloves garlic
1 tablespoon red miso
2 tomatoes, cubed

What You Do:
1. Using a vegetable peeler or mandoline, cut thin, wide strips lengthwise down zucchini. In a bowl, place zucchini strips, cover with water, and add sea salt and lemon juice. Soak for 2 hours. Drain, rinse, and drain again.

2. For the pesto, in a food processor, combine walnuts, basil leaves, and garlic to create a paste. Transfer paste to a bowl and stir in miso.

3. To prepare each wrap, lay a zucchini strip flat. In center of zucchini strip, place a teaspoon of pesto. Press a small piece of tomato into pesto. Roll up zucchini strip. With a toothpick, secure wrap or serve it seam side down on a serving plate. Serve with chopped basil garnish.

Boardwalk Chocolates

We consider ourselves chocolate experts, if being an expert means you eat a lot of chocolate, so we only go bonkers for the best out there. When a delightful box of Boardwalk Chocolates arrived to our office, we were estatic to indulge in truffles with flavors like Banana Split, Fire Eater (a hot little treat of chipotle chili wrapped in cocoa), Peanut Butter Cloud, and more. Let's just say that at the end of the day, there was nothing left in the box but wrappers. We loved them so much we sent our May+June wedding couples each a box to celebrate their nuptials. Nothing says romance like vegan truffles.
